banana bread
So far the resolutions are going quite well. Have made this banana bread 3 times already this year, and it's worked each time (surprisingly). I thought it best I share it with you. I think it's lovely with just butter and a cup of coffee, you might prefer jam or honey too.
Banana Bread
90g butter
1/2 cup caster sugar
2 eggs
1 teaspoon vanilla
2 cups plain flour
2 teaspoons baking powder
3 medium bananas (ripe and mashed)
Grease loaf tin and preheat oven to 180C.
Combine all ingredients in a bowl and blend with a food mixer.
Spoon into loaf tin and bake for 1 hour or until cooked through when pierced in the middle with skewer.
Serve with butter. Yum.
